Black Bean Pie

Ingredients
Black beans, brown rice, tomatoes, onion, extra virgin olive oil, eggs and milk
Directions
Prepare enough brown rice for 4 servings according to package directions. In a separate pan, saute onion in olive oil over medium heat. Add chopped cherry tomatoes and black beans to warm up. In a bowl combine brown rice, black bean mixture, milk and eggs, pour into a greased pie pan. Bake at 350 degrees for 30 minutes or until cooked through.
