Chicken Teriyaki Stir Fry

3 tbsp olive oil2 oz white wine6 tbsp soy sauce1 tbsp corn starch1/4 tsp white pepper1 tsp sugar4 cloves garlic, chopped finely4.5 c broccoli, chopped3 c green peppers, sliced4.5 c onions, sliced4.5 c carrots, sliced228 grams tofu (1 package)1.7 lbs chicken
Cook chicken; drain. Dissolve corn starch in a small amount of water; reserve. Saute garlic in olive oil. Add carrots and white wine; cover and cook for a few minutes. Add onions, then peppers and broccoli; cook for a few more minutes, Add chicken, tofu, sugar, soy sauce, corn starch and white pepper. Cook for a few minutes. Serve over rice. Makes 9 3/4-cup servings.
