Sautee the ginger and garlic in vegetable oil. Add soy sauce, water and brown sugar. Set aside to cook/thicken. Brown chicken in a oiled (I use non-stick spray) pan. Once the chicken is cooked, add liquid "sauce" mixture. Allow to simmer for 15 minutes. Serve over rice.
Serving Size: Makes 4 1/2 servings (4 ounces of chicken each)
