raisin coleslaw

Ingredients
1/2 cup raisins1/2 cup apple juice1/2 baked potato, skin removed1 tsp. mustard1 tbsp. lemon juice4 cups of shredded cabbage2 cups of shredded carrots2 cups of peeled and shredded apples1/4 finely chopped scallions
Directions
blend raisins, apple juice, potato, mustard and lemon juice. mix the remaining ingredients together and pour mixture over salad and mix in.
