Southern Style Okra

Ingredients
1 Tablespoon olive oil2 cups sliced okra1 medium onion chopped1 can of tomatoes ( I prefer to make this with fresh chopped tomatoes , about 2 or 3, in the summer)salt and pepper to taste
Directions
1. Heat the olive oil in a sauce pan. Add the okra and onions and saute until the onion is tender but not brown.

2. Add the tomatoes, salt and pepper. Cover and simmer until the okra is tender.

    I used fresh tomatoes, roma instead of beeksteak tomatoes; red onion and a little water to replace the juice of the canned tomatoes, and frozen kernel corn (last minute add). It reminded me of my childhood. Will use this on a regular. - 8/26/16
