6 x boneless/skinless chicken thighs2 x 14oz can petite diced tomatoes3 tbsp olive oil1 large sweet onion (diced)oregano flakes (to taste ... 2 tsp ?)
1. sweat onion in olive oil until translucent
2. add tomatoes & bring to boil
3. reduce to simmer and sprinkle on oregano flakes
4. add chicken thighs, make sure covered with sauce
5. return to boil then simmer 2hr stirring occasionally
