Garlic-Herb Potato Packs

Ingredients
0.50 tsp Pepper, black 6 tsp Thyme, fresh 2 1tsp Olive Oil 10 clove Garlic 4 tbsp chopped Shallots 24 oz fingerling potatoes
Directions
Preheat the grill to 375-400 degrees.

Spread out a large sheet of heavy duty aluminum foil, then add the olive oil in the middle. Add the remaining ingredients, making sure the olive oil, thyme, and pepper are evenly distributed.
Seal the edges of the packet, place on the grill, close the lid, and cook for 25 minutes. Open the packet carefully (away from yourself to avoid steam burns).

Serve immediately.

    I was short on time so I tossed all the ingredients to coat well and placed into microwaveable ovenware. I microwaved this dish for about 5 minutes and then spread it on a cookie sheet to broil in the oven for another few minutes. My family claims it's a keeper. YUM! - 6/2/12

    Been doing this aver 40 years. So good. Foil packet cooking or grilling is not new, but easy, easy clean up, wonderful way to meld flavors. Used to make up the packets, stash them in a cooler and cook at a picnic site or camp site. They bake well in the oven too. - 6/2/12

    I make foil pack potatoes all the time but just throw stuff in. This was nice to have all the measurements and nutrition calculated for me. Thought there would be more garlic flavor than I tasted. Overall yummy! - 6/2/12

    We do this all the time. So delicious. If we cook them on the grill, we microwave them first, for a few minutes so they don't burn before cooking through completely. - 6/2/12
