Meat Loaf

Ingredients
* Ground chicken, 16 oz, (1lb) * Zuccini - 1/2 cup shredded *Parmesan Cheese, grated, 1/4 cup grated *Quaker Quick minute Oatmeal 1/2 cup Fresh chopped Parsley, 4 tbsp Egg, fresh, 1 large Tomato Sauce, 1/2 cup (I used vegetarian spaghetti sauce, low sodium) Salt, 1/2 tsp or 1/4 Pepper, black, 1/2 tsp * Whole wheat bread crumbs 1/4 cup (bought at Bulk Barn)
Directions
1. place tin foil on bottom, up sides of crock pot - I didn't have tin foil, so spread olive oil in pot with paper towel.
2. Place all ingredients except tomato sauce in a bowl and mix well and form into a loaf.
3. Place in crock pot and cover with the tomato sauce.
4. Cook on HIGH for ONE HOUR. then,
5. Cook on LOW for about FOUR HOURS. (until it reaches 160F degrees on an instant-read thermometer)
6. Remove from crock and cut how you like. :)


Serving Size: 4 servings - but I find these very large
