Salmon with Cucumber Salsa

Ingredients
1/2 English Cucumber, peeled, quartered and thinly sliced1 cup Chedrry tomatoes, quartered1/2 yellow bell pepper, cut in 1in. strips2 Tbsp finely chopped onion1 tsp parsley1 tsp lime juice1`/2 tsp crushed red pepper1 1/2 tsp extra virgin olive oil1 tsp honey1 tsp salt1/4 tsp black pepper4- 5oz salmon fillets
Directions
Gently toss together cucumbers, tomatoes, bell pepper and onion in medium bowl. In small bowl whisk tgogether lime juice, 1 tsp of oil,honey,red pepper flakes,parsley, and 1/2 tsp salt. Pour dressing over salsa, toss and set aside. Season salmon with salt & pepper. Heat remaining oil in non-stick fruing pan over medium high heat. Add salmon and cook 8 to 10 minutes or when thickest part reaches 145 degfrees.Transfer to plates and top each with 1/4 of the salsa and fresh lime wedge.
