Chicken Reuben Quesadillas

Ingredients
4 whole wheat, low card 8" tortillas1/3 cup bottle Russian dressing6 oz. low-fat, part-skim mozzarella cheese1 cup sauerkraut, drained1 cup canned chicken, drained
Directions
Preheat oven to 425 degrees. Brush a baking sheet lightly with canola oil. Put tortillas on a work surface. Spread with Russian dressing. Layer cheese, chicken, and sauerkraut on 1/2 of each tortilla. Fold other half of tortilla over and put on prepared baking sheet. Brush tops and edges with canola oil and bake 10 minutes. Flip the quesadillas, transfer to a cutting board and let rest 5 minutes. Cut each into three wedges.
