Zuchini Bread

3 C. whole wheat flour1 tsp salt1 tsp baking powder1 tsp baking soda3 tsp cinnamon3 tsp vanilla extract3 eggs1/2 c. vegetable oil (canola)1/2 c. zuchini puree (made with 2 med. zuchini's steamed and food processed into a puree - cooled)2 C. grated zuchini1 1/2 C. brown sugar
Grease bread pan. Preheat oven to 325 degrees F.
Mix flour, salt, baking powder, soda, sugar, and cinnamon together in a bowl. Beat in eggs, oil, zuch puree, and vanilla. Stir in zucchini until well combined. Pour batter into prepared pan.
Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.
