German Pizza

Ingredients
1 lb ground beef1 large onion1 green bell pepper1 ½ tsp salt divided ½ tsp pepper 2 TBS butter or margarine7 med. Potatoes, peeled and finely shredded 3 eggs beaten 1/3 cup milk2 c (8oz) shredded cheddar or mozzarella (I used mozzarella, and probably a little over a cup, just enough to barely cover, trying to cut calories.)
Directions
In 12 inch skillet (I only have don’t have one so I went with 19in) over medium hear, brown beef with onions and green pepper, ½ tsp salt and pepper (I didn’t measure). Remove meat mixture from skillet and drain fat. (I rinse the meat with water in a colander to get out more fat.) Reduce heat to low (I did simmer). Melt butter in skillet then spread potatoes over butter and sprinkle on remaining salt (I turned the potatoes getting them coated but I don’t know if I should have.) Top this with the beef mixture. Combine egg and milk. Pour over all. Cook covered until potatoes are tender about 30 minutes. (It was too liquidy so I had to turn the head up to a little less than medium and cooked it for an additional 20+ minutes.) Top with cheese and let melt, about 5 minutes.

    20g of fat??? id tweek this recipe some if i were watching my fat and calorie intake like exchanging the ground beef with extra lean ground beef and leaving out the butter and using egg substitute and using fat free evaporated milk instead of regular. your taste buds will never know the difference! - 1/21/08
