chicken risotto

Ingredients
1 cup risotto rice8 oz. boneless, skinless chicken breast3 cups chicken broth1 tbsp. canola oil2 tbsp. butter3/4 c. chopped bell pepper5 medium mushrooms, chopped1/2 medium onion, chopped
Directions
saute chopped onion, green pepper, and mushrooms in oil and butter for 3 minutes. Add rice, stirring for 2 minutes. Stir in 1 cup of broth and continue cooking and stirring until liquid is absorbed. Continue cooking and stirring until liquid is absorbed. Gradually stir in remaining broth 1 cup at a time, cooking and stirring until liquid is absorbed before adding the next cup. Makes 4 servings.
