El Dorado Casserole

1 lb ground beef1/2 cup onions1/2 cup sour cream1/2 cup cottage cheese1/2 bottle red chile sauce1/2 bag tortilla chips2 cups shredded Mexican blend cheeseOptional:1 packet taco seasoning3/4 cups water
Brown beef in pan; drain. Add onions and optional taco seasoning and water. Set aside.
Mix sour cream, cottage cheese, and red chile sauce together until blended. In 9x13 dish, crush a layer of tortilla chips to cover bottom. Take meat mixture and layer on top of chips. Add half cheese and chile sauce mixture on top of meat. Add layer of cheese then layer of chips and continue layering until dish is full.
Preheat oven to 350. Cover dish with aluminum foil and cook for 30 minutes. Remove aluminum foil and cook for another 30 minutes, or until cheese is melted and bubbly. Enjoy!
Serving Size: 9x13 dish makes 8 servings
