Frijoles O'Brian Potatoes

Ingredients
2 Medium Potatoes, diced1/3 large red bell pepper, diced1/3 large green bell pepper diced1 medium onion, diced1 tbsp olive oil1/2 cup black beans1 Tbsp Cumin1/8 Tsp Red Pepper or to taste
Directions
Peel and chop onion. Saute onion, cumin, and red pepper in oil in nonstick skillet over medium heat until onion is just transparent. Chop pepper, add to onion and continue to saute until just starting to brown. Meanwhile, slice the potatoes into bite-size pieces. Remove onions and peppers from pan and add potatoes - with a drop more oil if needed. Saute potatoes until light brown and cooked through. Return onions and peppers to pan and continue to saute another 5 minutes.
