Pancake, Sweet Dutch Apple

1 - Apple, fresh, Granny Smith3 Tablespoons - Sugar3/4 Tsp - Cinnamon, ground2 Tablespoon - Butter3 - Egg, fresh large1/2 Cup - Milk, nonfat1/2 Cup - Flour1/8 tsp - Salt1/2 tsp - Vanilla Extract
* Heat oven to 425. peal and quarter apple, trim away core, then slice thinly.
* In a small bowl, mix 2 Tablespoons of the sugar and 1/4 teaspoon of cinnamon with a fork. Add the apple slices and toss until they're well coated.
* Slice the butter into t2 equal pieces and place them in a 9" glass pie pan. place in oven until butter melts, swirl the pan to coat the surface.
* Spread the apples over the bottom of the pan. Bake until the apples are softened slightly and butter is bubbling, beginning to brown (about 10 minutes).
* Meanwhile, make the pancake batter. In a blender, combine the eggs, milk, flour, salt, vanilla, and remaining sugar and cinnamon. Blend on Medium speed until they're well mixed and frotyhy (about 1 minute).
* Remove pie pan from oven. Pour batter over the apples, then bake until it's puffy and golden brown (about 25-30 minutes). let stand to cool slightly (Note: it will deflate, that's OK).
* dust with confectioners' sugar, cut into wedges and serve.
