Seitan & Mushrooms with Egg Noodles

2 T. olive oil1/2 lg. onion, sliced3 cl. garlica generous pour of red wine or dry sherrylarge can diced tomatoes3 portabella mushrooms, halved and sliced5-6 large button mushrooms, sliced1 t. dried thyme1 bay leaf1/2 c. fresh parsley, chopped1 c. water1 t. vegetable bouillon1 package/portion of seitan1 bag of egg noodles
Heat the oil - saute onions and garlic. Add the wine and cook for a minute. Add tomatoes, herbs, mushrooms, water and bouillon - stir and let simmer for 20 minutes or so. Meanwhile, prepare the noodles without added salt. Slice the seitan and add to the sauce when noodles are nearly done, stir to warm through. Combine sauce and egg noodles. Serves 6-8.
