Apricot Chicken

Ingredients
2 pounds chicken tenderloinssalt and pepper1 large onion2 tbls cider vinegar12 dried pitted apricots2 cups chicken stock1 cup apricot fruit spread/preserves
Directions
Heat large skillet, at 2tbls oil. Add chicken. Lightly brown chicken on each side. Add onions. Cook 5 minutes. Add vinegar to pan and let evaporate. Add apricots and stock. When boiling, add preserves and and stir. Cover and reduce heat, simmer 10 minutes.
