Shrimp Creamy Curry w/Pasta

Ingredients
1 1/3 cup vegetable stock4 tblsp cream cheesegarlic - chopped (1 clove)butter or margarine - 1tbspMedium curry spice - to taste
Directions
Melt butter, add shrimp, and curry spice
remove shrimp from pan and set aside
add vegetable stock to pan, bring to a boil
add cream cheese and use whisk to melt. Let it simmer to cook down and thicken. If you need it thicker, use a pinch of flour

Serving Size: 1/2 cup pasta w/about 8 shrimp per person

    I like the lower-calorie version of the curry sauce. I wanted more visual contrasts. So I added sauteed onion, green and red bell to the mix. I served it over white basmati rice. - 4/16/15
