Pinto Bean Salad

0.75 lbs Dry Pinto Beans1 Cucumber, chopped2 Plum Tomatoes, chopped1 Bell Pepper, seeded and chopped1 Celery stalk, thinly sliced2 tbsp Dijon mustard2 tbsp Fresh Lime Juice1 tbsp Fresh Parsley, chopped1 tsp Ground Cumin
Pepare Dried Pinto Beans:
- Sort through beans and make sure none are cracked or shrivelled (pick those ones out)
- Rinse in cool water to clean
- Soak Beans over night OR Quick Soak by Boiling for approx 3 - 5mins, take off heat and cover for at least an hour, preferably 4.
- Strain and Rinse
- Let Cool
Mix all ingredients in a large mixing bowl, let sit for a while to allow flavours to mingle and serve! :)
Serving Size: Makes 4 Small Servings or 2 Big Ones!
