Turkey Meatloaf (South Beach Phase 1)

- 3 to 4 Mushrooms, chopped finely - 1 medium onion, chopped- 2 celery stalks, chopped- 2 cloves of garlic or 1 tbsp garlic paste- Salt and Pepper- Mixed herbs- Fry light spray oil or similar low fat cooking oil- Turkey Mince (lean) - 2 medium eggs- 1 can beans of your choice (I used butter beans)
1. Dice all veg as small as you like it in a meat loaf.
2. fry together the mushrooms, celery, garlic, herbs/salt /pepper etc together in cooking spray for 5 mins.
3. Set aside on a plate and allow to cool for 5-10 mins.
4. Combine turkey mince, eggs and cooked veg in a bowl.
5. Place mixture in a nice loaf tin or pie dish.
6. Cook for 50 mins until golden brown on top. Cook at 190 degrees Celsius, on the middle shelf of your oven.
Serving Size: Makes 3-4 servings
