Pesto Minestrone Soup

Ingredients
1-2 cloves garlic, minced1 C onion, chopped1 bell pepper (any color), chopped1 C celery, chopped1 C carrots, chopped1/2 tsp salt & pepper15 oz can diced tomatoes4 C vegetable or chicken broth15 oz can cannellini or great northern beans1 C (4oz) uncooked pasta (any shape)2 C spinach, chopped1/4 C pesto sauce
Directions
Spray a large soup pot with cooking spray and place over medium heat. Add onion and saute for 3-4 minutes, add garlic, bell pepper, celery, carrots, salt & pepper and saute another 3-4 minutes. Add tomatoes and broth and bring to a boil. Add beans and pasta and simmer 10 minutes. Add spinach and cook another 10 minutes. Top each serving with 1 T pesto.
