Double Chocolate Protein Date Bars

Ingredients
2 servings chocolate protein powder 8 medjool dates, pitted and rehydrated8 oz unsalted, oil roasted cashews1 tbsp raw cacao1 tbsp flax seed1 tsp organic vanilla1 tsp cinnamon1 cup gluten free oats1/2 cup unsweetened applesauce1 1/2 cups fiber one cereal5 gingersnap cookies
Directions
Remove pit and soak dates overnight in water

Drain dates, combine all ingredients except for fiber one cereal and gingersnaps in food processor. Blend until chunky consistency. You can add the nuts in last if you like bigger pieces.

In a separate food processor combine fiber one and gingersnaps, blend until the consistency of bread crumbs.

Take small handfull of protein mixture, roll into log shape. Then roll in cereal/cookie mixture.

Refrigerate for at least 4 hours. Enjoy
