6 boneless, skinless chicken breasts cut into thirds1 large onion coarsely chopped2 Tbsp of ketchup2 Tbsp of cider vinegar3/4 cup of water1 tsp thyme1/4 salt (optional)1 Tbsp of cornstartch
1. Mix the ketchup and vinegar with the water.
2. In a pressure cooker put in the chicken, onion and sprinkle the thyme.
3. Add in the water mixture and salt if desired
4. bring the pressure to high to let it start to rock and then turn it down to medium for 30 minutes
5. When you are ready to serve, cool down the pressure under the tap and then open the cooker.
6. In a small bowl, mix the cornstarch with 1/4 cup of water and add to chicken mixture.
7. Bring it to a boil. Turn it down to low and have the mixture thicken for about 3-4 minutes
8. Serve over a small baked potato or noodles
