Red Curry Laksa

1 tbsp olive oil 2 tbsp red curry paste1 chicken breast, cubed4 cups chicken stock1 can light coconut milk1 medium zucchini, cut in matchsticks1 large bell pepper, cut in strips1 400gm package noodle (I use shanghai, but use your preference)handful thai basil leaves, chopped
Heat oil, fry curry paste. Add chicken, stir fry until cooked. Add stock, coconut milk and vegetables. Bring to a boil. Add noodles, boil until heated through.
Add chopped basil and serve.
Serving Size: Makes 3 big bowls of soup
