1 lb boneless pork, cut into 1" pieces2 Yukon potatoes, cut into 1" pieces1 Sweet potato, cut into 1" pieces1 C. chopped carrots1 can sweet corn1 Jalapino, chopped1 C. chicken broth2 Tbps. Flour1 Tbps. Canola oil2 cloves garlic, minced1 Tbps. Fresh Thyme1 Tbps. Fresh ParsleyPepper, to taste
Toss pork with 1 Tbps. of flour and cook in oil over medium heat, just until all sides are browned. Mix with remaining ingredients, except left over flour and parsley, in croc pot. Cook on low for 5 to 6 hours. Add flour and cook on high for 10 minutes or until thickened. Add parsley and serve.
