Microwave Flax seed Muffins

Ingredients
1/4 cup Ground Flax seed2 tsp Ground Cinnamon2 tsp Granulated sugar1 tsp Baking powder1 tsp Coconut oil1 large Egg
Directions
Mix all the dry ingredients in a mug. Whisk egg up in separate dish. Add coconut oil & egg to dry ingredients in mug and mix well. Then microwave for about 1 minute (microwaves vary, try to find what works best for you). Muffin will rise, when top is firm and springy to touch (not sticky) then done. Let cool for about 1 minute then turn mug upside and take muffin out. Enjoy with Coconut spread or honey!
