1 salmon fillet (8oz)1/5 cup crushed pecans2 tbsp olive oil2 tsp spicy brown mustard salt/pepper to taste
Salt/pepper salmon fillet (keep skin on). Brush mustard on meat side of fillet. Press into crushed pecans until thick layer is formed. Heat olive oil on medium high heat. Place salmon, skin side down, into skillet. Brown fillet, then flip onto skin side, brown another 5 minutes or so. Remove from heat once salmon is fully cooked through. Use spatula to slide fillet off of skin. Serve with your choice of sides.
