Healthy Blueberry Wheat Muffins

Ingredients
2 cups whole wheat pastry flour1/2 cup golden flax meal2 teaspoons baking powder1/2 cup Benefiber powder1 cup soy fat free soy milk1/4 cup water1/4 cup honey2 tbsp vanilla extract1 teaspoon almond extract1/2 cup fat free mayo2 cups blueberries - fresh or frozen
Directions
Add all dry ingredients to your mixer bowl. In a large 4 cup measuring cup mix the wet ingredients until blended. Add wet ingredients slowly to the dry. Stir until moistened. Fold in blueberries. Using a large ice cream scoop or 1/4 measuring cup, fill muffin cups. Bake approximately 16 - 20 minutes or until tops are set.
