1 Pound (454 gms) Boneless Skinless Chicken Breast - sliced thinly for stir frying1 Tbsp Canola Oil2 Carrots - sliced in thin strips or shredded2 Ribs of Celery - sliced thinly on a diagonal1 Medium Onion - Cut in half and then sliced thinly2 Cloves Garlic - finely chopped1 Tsp Grated Ginger Root2 Cups Bean Sprouts (fresh or 1 can) rinsed well1 Can Bamboo Shoots cut in Strips1 Bag of Broccoli Cole Slaw mix or Rainbow Salad Mix (cauliflower slaw)
In a non-stick frying pan or wok heat 1 tbsp oil until very hot and stir fry chicken strips for a few minutes on high heat until no longer pink. Before chicken starts to brown add in garlic and ginger and stir fry for a minute or so. Add onion, carrot, celery and broccoli slaw and stir fry for another 3 minutes, then add remaining ingredients (bean sprouts and bamboo shoots). Serve hot.
