Vegan Mini Blueberry Muffins

Ingredients
1.5 cups flour3/4 cup sugar2 tsp. baking powder1/2 tsp. salt3/4 cup non-dairy milk1/4 cup vegetable oil1-2 cups blueberries (frozen or fresh)optional: 1 tsp. vanilla extract, 1 tsp. cinnamon
Directions
1. Preheat oven to 400 degrees. Combine all dry ingredients, then add in the wet ingredients. Then fold the blueberries into the mix.
2. Baked for 18 to 20 minutes. Test with a toothpick. If toothpick comes out clean, they're done!

Serving Size: makes 24-32 mini muffins (depending on size)
