Ingredients
2 (2-inch) wedges of kabucha squash, seeds removed1 cup cauliflower florets2 baby bok choys, cut into 4 length-wise(I substituted 1/2 cup each bok choy, kale, spinach, and romaine)2 cups cooked brown rice2 cups cooked adzuki beans1 cup soaked hijiki seaweedOPTIONAL: Fresh cilantro leaves to garnishDressing1-inch piece of ginger1/4 cup white sweet miso1/4 cup olive oil1 clove garlic1 t agaveJuice of 1 lemon
Directions
Cook beans and rice thoroughly. Steam veggies for 3 minutes, until tender. In a bowl, layer steamed greens, beans, cauliflower, rice, and soaked seaweed. Pour 1-2 T of dressing over the top.

Serving Size: Makes 4 servings of about 2 cups each
