Quinoa Roasted Chicken Salad

Ingredients
1 cup quinoa, cooked1-1/2 cups chopped roasted chicken breast1 cup chopped English cucumber1 cup halved grape tomatoes1 cup chopped parsley1/4 cup chopped fresh mint4 green onions1 garlic clove, minced1/4 cup fresh lemon juice2 Tbs. olive oil1/4 tsp. salt
Directions
Combine quinoa, chicken, cucumber, tomatoes, parsley, mint, onions and garlic in a bowl. Set aside. Combine lemon juice, olive oil and salt in a small bowl; whisk until well blended. Pour dressing over quinoa mixture; toss gently.
