Apple-Blueberry Bread Pudding

8 slices whole-grain bread4 Apples, pared and cut into 1/2" chop 2 Cups Blueberries6 Egg Whites, beaten (or 1 1/2 c. Egg white replacement)1 1/2 Cup Soy milk Juice of 1 Lemon1 Tblsp. Ground Ginger 1 Tblsp. Ground Cinnamon1 tsp. Ground NutmegOlive oil Spray
Heat oven to 350. Spray a 13 x 9 inch pan with the oil. Break the bread into small pieces and place them in the pan. Clean and rinse the blueberries then spread them over the bread pieces. Pare and chop the apples, then place them over the blueberries. Combine the egg whites, soy milk, lemon juice and seasonings in a medium bowl and mix well. Pour evenly over the fruit and bread. Bake for 55 mins. Allow to cool and set up for 1/2 hour before slicing into desired portions.
