Crunchy Cornmeal Oven Fried Fish

Ingredients
1 lb orange roughy, or other whitefish fillets1/2 cup all-purpose flour1/2 teaspoon salt1/2 teaspoon lemon pepper1 egg1/2 cup plain bread crumbs1/2 cup cornmeal3 teaspoons lemon zest
Directions
Preheat oven to 450 degrees
In shallow dish, combine flour, salt and lemon pepper.
Beat egg in another shallow dish.
In another shallow dish combine bread crumbs, cornmeal, lemon zest.
Dip fillet in flour, then egg, then bread crumb mixture and put in shallow pan sprayed with Pam, tucking under any thin edges.
Bake in 450 degree oven for 6-12 minutes or until fish flakes easily with fork - flip 1/2 way through cooking time.

    Delicious! I will definitely be using this recipe as my go-to "fried not fried" fish recipe. I did spray the top of the fillets with Pam to give it a little more crisp. - 1/28/15
