Makeover: Southwestern Pasta Salad

8oz (1/2 of a bag) of Trader Joe's Organice Gluten Free Brown Rice Penne Pasta1 1/4 cups of Frozen Yellow Corn1 cup dried Black Beans1 cup (4 servings) Heather's Fresh Salsa1 cup shredded Swiss Cheese1 cup chopped/diced Green Pepper (Bell Pepper)Optional: garlic powder, salt and pepper or cayenne pepper to taste (in any combination)
Set black beans to soak in water overnight or at least 8 hours.
Prepared pasta according to package direction. Drain thoroughly and place in a large bowl.
Boil black beans for 10 to 15 minutes (until done but still firm). Thaw frozen corn. Place both into the same large bowl as the pasta.
Combine remaining ingredients with the pasta, black beans and corn. Serve immediately.
Serving Size: Makes 8 main dish servings or 16 side dish servings
