Muffin cup quiche

Ingredients
2 egg whites1 cup cooked white rice4 eggs whipped1/4 cup green onion, diced1/3 cup red pepper diced1/2 cup shredded cheddar cheese1 tsp butter brushed on muffin tins
Directions
Mix together egg whites and cooked rice with salt and pepper. Press mixture into the bottom of 9 muffin cups in a muffin tin. Top rice with onions and peppers. Pour egg over vegetables, sprinkle cheese on top of egg.
Bake at 350
