Wonderful Whiting

Ingredients
8 Whiting fillets2 tbsp Lemon Olive OilOld Bay Seasoning to taste2 tsp minced garlic
Directions
Heat oil in a large skillet. (an electric skillet works well). Add garlic and saute over medium heat for a minute or so. Add fish seasoned liberally with Old Bay. Cover pan and let simmer at a low bubble for 5 minutes. Turn fish and continue cooking for about 3 minutes. The length of time will depend on the thickness of the fish.

This recipe can be adapted for larger or smaller families.

    This was a tasty dish. I did not have lemon olive oil so I used some cranberry rosemary oil combined with EVOO. I also had whole fish rather than filets. I added a squeeze of lemon juice to finish. I will definitely make this again with fillets of whiting or whatever white fish I have on hand. - 2/17/13
