Salmon Patties

Ingredients
2-5oz cans pink salmon1 large egg1.5 TBSP - 2 TBSP white flour1/2 slice toasted bread crumbled or 1/4 cup bread crumbs1 cap full of lemon or lime juiceonions (as much as you like)green peppers (as much as you like)seasoning to taste (salt, pepper, onion powder, garlic powder, crushed red pepper, cayenne pepper, etc.)1-2 TBSP olive oil for sauteeing in pan
Directions
Chop onion and green pepper. Open salmon, drain and put in a bowl. Add onion, green pepper, egg and flour to bowl with salmon. Mix. Add your seasonings plus lemon juice and mix again. Add bread crumbs or crumbled bread, then mix lightly. Form 4 patties of equal parts from your mixture using your hands. Pour some EVOO into pan and let it get pretty hot over medium heat (about 3 min). Place patties in pan and let cook on first side about 5 minutes, flip and let them cook another 5. They should be nice and golden brown!
