Wholemeal Cucumber Cream Cheese Sandwiches

4 thinly cut Slices wholemeal bread2 Tbs low fat cream cheese48 very thin slices cucumber2 Tbs apple cider vinegar
Soak the cucumber in the vinegar for at least 1 hr
Remove and drain very well, then lay on sheets kitchen paper and dry well
Spread the bread with the cream cheese, and spread the cucumber slices on 2 slices
Place the other slices firmly on top to make 2 sandwiches,
Cut the crusts off and cut each sandwich into 4 square pieces.
Makes 8 small sandwiches
Serving Size: Makes 8 small sandwiches
