Baked Chicken Fingers

Ingredients
1.5 lbs chicken tenders or breast that has been sliced into thin strips (approx 12 tenders)1 beaten egg1.5 cups of panko bread crumbs seasoned to taste with:saltpepperbasil and/or oreganogarlic powdercrushed red pepper flakes or any other dried herb or spice you prefer
Directions
Preheat oven to 400 degrees. Line a cookie sheet with foil. Place a wire rack over the cookie sheet and spray with cooking spray.

Wash chicken and pat dry with paper towels. Season chicken with salt and pepper on both sides.

Set up assembly line of chicken, beaten egg, and seasoned panko. Dip chicken into egg and then coat both sides in the panko mixture. Place chicken on wire rack.

Bake for 10-13 minutes at 400 degrees then flip over and bake for another 10-13 minutes until tenders are fully cooked.

Serve with dipping sauce such as honey mustard, buffalo sauce, soy sauce, barbecue sauce, etc.
