Chicken, Almond and Cress Ribbon Sandwiches

2 slices multi-grain sliced sandwich bread1 slice wholemeal sliced sandwich breadFilling1tsp olive oil 50g (2oz) chicken breast fillets, sliced through centre1Tbs low fat mayonnaise 1 Tbs flaked almonds, toasted2tsp butter, softened 1" cucumber thinly sliced10g cress shoots or snow pea sprouts
Heat oil in a non-stick frying pan over medium-high heat. Cook chicken,
for 2 to 3 minutes each side or until just cooked through. Allow to cool. Finely chop chicken.
Place in a bowl. Stir in mayonnaise. Season with salt and pepper.

sides of 1 slice wholemeal bread with butter. Place over filling. Top with cucumber, and cress
