Whole Wheat Cheddar Biscuit

-1 cup white flour- 3/4 cup whole wheat flour- 0.5 tsp baking powder- 0.25 tsp baking soda- 3 Tbsp unsalted butter- 3/4 cup fat free milk- 1/3 cup shredded cheddar cheese (or any other mix in you choose)
1. Add one Tbsp of white vinegar to the skim milk and set aside (will form a make shift buttermilk)
2. In a bowl combine the white flour, whole wheat flour, baking powder & soda.
3. Cut the butter into small pieces and add to the dry ingredients. Using your hand combine the butter into the dry ingredients so that no pieces are left.
4. Add shredded cheese and combine.
5. Add butter milk and stir until thick dough forms. After a certain point you will not be able to stir anymore and using your hands is way more efficient. Dough will be sticky in the beginning, but as all the flour is incorporated it will become less sticky.
6. Divide dough into 16 pieces. Form each piece into a ball with your hands. Place dough ball onto a baking sheet sprayed with non-stick cooking spray and lightly press down on top of the dough with the palm of your hand to flatten slightly. Repeat with all sixteen pieces.
7. Bake at 375 degrees for 20 minutes or until puffed up, lightly browned on the top and crunchy on the bottom.
