Druid's Earth Bread (No Bread Machine!)

Ingredients
Honey (any variety will do) - 1/3 CupWater - 3/4 CupYeast - 1 tbspSalt - 1 tspSteel Cut Oats (Irish/Scottish Oats) - 1/2 CupUnbleached, White Flour - 2 Cup
Directions
Prep your yeast, by mixing it with 1/4 a cup of warm to hot water.

Once it starts to foam a little, add 1/3 cup honey, and the next 1/2 cup of water which should be lukewarm in temperature. I recommend mixing your water and honey on the side first so that the honey does not stick.

Let the liquid mix foam for a few minutes.

On the side, mix your 2 cups flour, 1/2 cup steel cut oats, and 1 tbsp of salt.

Once the liquid mix has bubbled and you know it is active, slowly add it to the dry mix.

With a fork, slowly mix the ingredients to form a ball of dough. Once it is sticking together, lightly powder your hands with flour and knead the dough on a flat, floured surface until it is springy.

Put the dough in a dish and cover with a warm, damp towel. Allow to rise for 30-40 minutes until it has doubled in size.

Punch the dough back down and allow to rise again.

Pre-heat the oven to 450. Once it is at 450 degrees, place the dough on a greased baking sheet, shaped like an itallian loaf. Slice three to four cuts in the top to allow the bread to expand.

Place the bread in the over and lower the heat to 375. This technique will help the bread become the right texture by allowing the temperature to slowly fall.

Allow to bake until the bread is golden, which will be approximately 25 minutes. When tapped on the bottom, it should sound hallow!

Viola! Makes a full loaf. Cut into 1/8s or smaller slices. One eighth of the entire loaf will be about 190 calories.

    I used whole wheat flour in this and some flax seeds and it worked no problem. I let it rise in the bread machine, then took it out, fromed it and let it rise again. It needed a bit more flour than called for for me and took about 20 minutes to cook. Will make again. - 6/3/08
