Indian Fry Bread (Hoe Cake)

Ingredients
3 c unbleached flour4 tsp baking powder1 tsp salt2 T unsalted butter or shortening1 c waterOlive oil, vegetable oil, shortening - enough to cover bottom of skillet
Directions
Mix together flour, baking powder and salt. Cut in butter or shortening until mixture is coarse and crumbly. Add in 3/4 c to 1 c water to make a soft dough. It may be a little sticky, so add a little more flour as needed. Divide dough into 4 parts. Flatten each part into a circle with your hands. Heat oil in pan and fry each part until golden brown and puffed on both sides, about 3 minutes each. Can be eaten as is, with butter or with jam/jelly.
