Crustless Spinach Cheese Quiche

Ingredients
1 (10 oz.) package frozen spinach4 large eggs1 cup reduced fat sour cream1 cup reduced fat cottage cheese1/2 cup shredded parmesan2 cups shredded cheddar1 tsp. salt1/4 tsp. blak pepper1/4 cup all purpose flour
Directions
Thaw the spinach in the microwave for 4 minutes. Meanwhile, beat the eggs, cottage cheese, sour cream, flour, salt and pepper. Add the cheddar cheese and spinach. Spray an 8x8 baking pan with oil, then pour the mixture in the pan, smoothing out on top. Bake at 350 F for 40 minutes. Cool then refridgerate.
