Ingredients
4 bananas, mashed1/4 c. egg beaters2/3 c. Splenda1 t. Vanilla extract2/3 c. milk, nonfat1 c. whole wheat flour1/2 c. oat flour (or Quaker Old-Fashioned Oats)1 t. baking soda1 t. baking powder1/2 t. salt1 t. cinnamon1 t. pumpkin pie spice1/8 c. Splenda brown sugar blend
Directions
Note: If you don't have oat flour, run the oats through a blender until they are a flour consistency.

Preheat oven to 425 degrees. Line a muffin pan with paper baking cups.

In a large bowl, combine bananas, Egg Beaters, Splenda, vanilla and milk; stir well. Stir in both flours, baking soda, baking powder, salt, cinnamon and pumpkin pie spice. Fill the muffin cups equally and sprinkle the brown sugar on the tops. Bake 20 minutes or until an inserted toothpick comes out clean.

Makes 12 muffins.

    I thought these were very soft, moist and yummy! I used 1/3c of the splenda brown sugar and 1/3c of the regular splenda sugar blend and mine turned out perfect! I also made mini muffins and got 36 out of one batch! - 3/24/08
