Wine Country Grilled Halibut

1.5 lbs Fresh halibut1 medium red onion, sliced1 large yellow bell pepper, sliced1 package baby bella mushrooms1 cup italian parsley, roughly chopped 1 tbl extra virgin olive oil1 tbl lemon pepper seasoningSalt to taste
Cut three large sheets of aluminum foil.
Place a half-pound fillet of halibut in the center of the foil.
Season the halibut generously with salt and lemon pepper. Drizzle with EVOO.
On top of the halibut, pile the sliced red onion, yellow pepper, mushrooms, and italian parsley.
Fold into a pouch and grill ten minutes each side.
Serving Size: Makes 3 half-pound servings
