Oriental Bow Tie Pasta Salad

1 tablespoon sesame seeds4-inch piece fresh ginger root, peeled3 tablespoons Dijon mustard2 tablespoons rice vinegar (or white vinegar)1 tablespoon sesame oil2 teaspoons sugar1/2 teaspoon soy sauce16 ounces bow tie pasta, cooked and drained8 ounces snow pea pods, blanched1/2 cup diced roasted red pepper1/2 cup diced celery1/2 cup chopped green onions
1. In small skillet, toast sesame seeds over medium heat until light brown (about 2 minutes); set aside for garnish.
2. Finely grate ginger into a small bowl. Roll the grated ginger into a ball and gently squeeze juice into a large mixing bowl (should produce about 2 tablespoons of juice). Add mustard, vinegar, sesame oil, sugar and soy sauce to the ginger juice. Whisk dressing until smooth.
3. Toss together cooked pasta, snow peas, pepper, celery, onions and dressing. Sprinkle with toasted sesame seeds. Chill.
Serving Size: Makes 8 one cup servings
