Chicken Francaise

2 whole or 4 half boneless/skinless Chicken Breasts, about 5oz, each1 tbsp Olive Oil1 cup, Mushrooms, fresh, pieces or slices1 clove Garlic1/2 cup Dry White Wine1/2 cup Fat free half and half1 tsp Tarragon leaves1 tsp Dijon MustardSalt and Pepper to taste
1. Heat the Olive Oil in a non-stick skillet. Add the mushrooms and saute until slightly browned. Remove.
2. Add the chicken to the skillet and brown the chicken breasts and heat until there is no pink in the center. Remove.
3. While the chicken is cooking, combine the remaining ingredients. After chicken is removed, pour the wine sauce in the skillet and add the cooked mushrooms. Cook for 10 minutes uncovered over medium heat.
4. Add the chicken breasts to the sauce, cover and heat for about 5 minutes until heated throughout.
5. Serve hot with sauce on the side.
